So easy and super yummy on a bed of baby spinach/kale mix or on a pretzel bun like Jonathan takes it!
Ground Chicken Avocado Panko bread crumbs Garlic You'll need two bowls. Take the ground chicken and put it in one bowl, add the garlic and any other spices you'd like and mix it together. in another bowl put your bread crumbs, I used 1/2 cup and then I needed more later. Chop the Avocado so it is in chunks and add it to the bread crumbs to coat it (this will keep it from getting mushy). I had to do a little at a time to keep it from mushing together. Once the Avocado is coated mix it into the ground chicken and make your burgers from it :). if you can keep the Avocados in chunks itis much better, enjoy!

Tried a new recipe last night that mom said dad liked and Joanthan loved it so that was awesome!! We used turkey kielbasa and cut it into 1/2 inch pieces and threw it in a pan with olive oil, lots of garlic, mushrooms, zucchini, onions and eggplant. Then in another pan I made spinach with onions, garlic and olive oil. I had my keilbasa mixture over spinach and Jonathan had it with spinach and rice. It was super yummy and took less than 10 minutes to cook once it was all cut up :). I am definitely skipping the eggplant next time though- we don't like eggplant very much. Second time trying it this week- just not sticking. I highly recommend it!! Thanks mom :)
Mom makes it with brussel sprouts and chicken kielbasa- YUMMY!!!! Mom's favorite new & yummy meatloaf recipe that is "challenge approved"!! It uses oatmeal which is technically a grain after 3pm so it's a baby cheat haha..
1 egg beaten 1/4c sour cream [plain greek yogurt] 2 TB Worcestershire sauce 1 Ts Sage, dried 1 Ts parsley, dried 1 Ts Oregano, dried ½ Ts Black Pepper 1/2c rolled oats [3/4c] ½ onion, chpd. ½ green Pepper, chpd. 2 celery, diced 1 can mushrooms, drained 1# ground turkey [Italian seasoning has better flavor] Beat egg, yogurt, Worcestershire & spices, add oats and allow to soak. Preheat over 350 degrees. [soften veggies on stove if you want] I just add them in with turkey & mix together. You can put on cookie sheet and form a loaf shape or bake in loaf pan. Bake for 30 min, remove and drain fat. Bake another 30min. I serve with sautéed spinach & cherry tomato plus a salad. Mom LOVES this recipe and eats it often so I asked her to share it with us :)
Here you go. I tried to explain – its tough, you will hear the pan sizzling kinda popping, then you know its time to flip. If they are not ready it is a terrible sticky mess L I would try a small one first to get the hang of it. my first one was huge, covered the entire pan and almost impossible to flip. It broke in half, missed part of the pan. Total disaster. LOL! I bet you could cook the whole batch & warm them in microwave later. I would use batter within 7 days. Just to be safe. Here is a great link to homemade pasta sauce recipes! I think I may try some of these :). I found a few stewed & diced tomatoes and a tomato paste with the only ingredient being tomatoes (no sugar or salt!) and removing the salt from the recipe will make it "allowed". Nice!

- whole grain flatbreads (there's whole wheat 6 inch pizza ones in the bakery section at my grocery store- Food Lion) - Tomato paste (check the ingredients, can ONLY have tomato, no salt, etc.... there was only one brand that made it with only tomatoes at my supermarket) - Veggies- I used: mushrooms, onions, green pepper, cherry tomatoes and basil Just add some water slowly to tomato paste until you get a good texture for pizza sauce (don't let it get too watery). Then add Italian spices like basil and oregano to the sauce. Put the sauce on the flatbread and top with your veggies. I cooked mine in the oven at 425 degrees for 8-12 minutes until the crust was crispy. It was so good I had it two days in a row! I tried this but we didn't like it, I think people that like avocado will though! Just take shredded chicken and avocado and mix them together. Add basil or cilantro and lime to flavor it the way you like. You can also add pepper, but no salt with our challenge! I think the salt was needed, or maybe the avocado was bad? It was super creamy so it was a great mayonnaise substitute. You can also make guacamole and then add the chicken to make guacamole chicken salad! I ate mine inside of a lettuce wrap, I LOVED the concept, just wasn't for me. Thinking Chaunice will love this one though!
SUper easy and fast pancakes that only need two ingredients and are OK to eat any time of the day with our challenge! Just mash together 1 ripe banana and an egg and then cook it in a frying pan. So good! I like to add blueberries to mine, if you're feeling crazy you can even throw in some dark chocolate chips and have a mini cheat :). Even Jonathan loves these!
Update March 4: I liked these with onion & garlic better than cayenne pepper. However they didn't stay crispy and weren't that "crispy" to start with. Really can't let them site for a few days like I had hoped and they aren't very good chip replacements... FAIL!
I'm making these over the weekend to have with sandwiches for lunches in place of chips! Hoping they are tasty, gotta drop the salt again! Quinoa is another good thing to have prepared in advance to grab as a side or snack when you are hungry. Here are 3 recipes I found that sound great! I haven't tried them yet- let me know if they're good!
