Mom LOVES this recipe and eats it often so I asked her to share it with us :)
Here you go. I tried to explain – its tough, you will hear the pan sizzling kinda popping, then you know its time to flip. If they are not ready it is a terrible sticky mess L I would try a small one first to get the hang of it. my first one was huge, covered the entire pan and almost impossible to flip. It broke in half, missed part of the pan. Total disaster. LOL! I bet you could cook the whole batch & warm them in microwave later.
I would use batter within 7 days. Just to be safe.

Protein Pancakes
1 c Oats
2 scoops Protein Powder
2 TB Flaxseed
2 Ts Baking POWDER
2 Eggs
2 TB Milk
1/2c Plain Greek Yogurt [a single serve container]
1/2c Applesauce, unsweetened
Mix dry ingredients, add wet ingredients. You can cook immediately or let sit overnight. Use within 7 days.
These do not cook like a regular pancake, no bubbles. I put heat on med-low and let them cook a lot. If they are not ready, they will stick to your spatula. Flip and let the other side cook but it won’t take as long.
Top with peanut butter & sliced strawberries, Bananas, peaches… whatever you like. They are even good with no toppings if your protein powder is flavored.
