Mom's favorite new & yummy meatloaf recipe that is "challenge approved"!! It uses oatmeal which is technically a grain after 3pm so it's a baby cheat haha..
1 egg beaten
1/4c sour cream [plain greek yogurt]
2 TB Worcestershire sauce
1 Ts Sage, dried
1 Ts parsley, dried
1 Ts Oregano, dried
½ Ts Black Pepper
1/2c rolled oats [3/4c]
½ onion, chpd.
½ green Pepper, chpd.
2 celery, diced
1 can mushrooms, drained
1# ground turkey [Italian seasoning has better flavor]
Beat egg, yogurt, Worcestershire & spices, add oats and allow to soak. Preheat over 350 degrees. [soften veggies on stove if you want] I just add them in with turkey & mix together.
You can put on cookie sheet and form a loaf shape or bake in loaf pan. Bake for 30 min, remove and drain fat. Bake another 30min.
I serve with sautéed spinach & cherry tomato plus a salad.
