- Green peppers

- 2 spicy sausages
- 4 strips bacon
- eggs (I think I used 2 or 3 whole eggs and 6 egg whites?)
Preheat over to 350 and coat a glass round pan with nonstick (coat it really well!!)
Start 2 pans, 1 pan add a chopped onion and fresh spinach. Add a little bit of olive oil to spinach (I always put it on top then rotate the spinach to get it everywhere instead of directly on pan). I used half the bag in this stage. Get it cooked down enough so its soft but not all sticking together, put it on the bottom of the pan.
Take the spicy sausage out of its casing and put it in the other pan, keep browning it and breaking it up. While the sausage is cooking cut up green peppers, tomatoes, scallions (very few) and any other veggies you like and layer them on top of the spinach. I take the inside out of the tomato so it doesn't get watery.
Add the sausage on top of the veggies and then add the 4 strips bacon to the sausage pan and cook (dont forget to drain sausage really well!). While the bacon is cooking, cook the rest of the bag of spinach (you dont have to, we just REALLY like spinach!!). Cut up the bacon and layer it on top of the sausage, layer the remainder of the onion/spinach on top of that.
That's all of your fillings! Now you need to add the eggs. I took a big bowl and mixed 2 or 3 whole eggs with about 6 egg whites. Beat it up and add a little bit of milk to it. Pour it on top and twist the pan back and forth so the egg makes its way down. Create & add more egg mixture if you need to, the goal is to cover all of the fillings. Add ground pepper and any other spices you would like :).
Cook in the over until egg cooked through, about 30-45 minutes depending on your oven and pan. Enjoy!!
